Starters: Laminated Brioche with ham hock & smoked broth; Mussel Fritter with green fig, sheep's cheese, preserved lemon; Saxon Chicken with truffle tortellini, wild garlic, mushroom broth. Mains: Bass with violet artichoke, rainbow chard, smoked roe sauce; Romney Lamb with almond, black cabbage, sprouting broccoli, Jersey royals (Orkney Scallop available as a supplement). Desserts: Chamomile Set Cream with rhubarb, tarragon, cookie dough; Strawberry with pistachio parfait, shortbread, white chocolate. Available Thursday–Saturday lunch / Monday–Thursday dinner.

Six courses including mussel custard, brioche, bass, and guinea fowl with baby gem, lardo, broad beans, asparagus, butter sauce, plus chamomile and strawberry desserts.
