Jalfrezi means ‘hot fry’ and became the reference to the dish of stir-fried cooked meat and potatoes made by Indian cooks for their British employers in Colonial India. However this loan's little resemblance to a modern version of the Anglo-Indian dish. The restaurant chef uses the Jalfrezi method to stir-fry green peppers, onions, green chillies as a base for a curry with just enough heat.
